Preheat your oven to 200°C (400°F). Prepare the beef: pat it dry, then in a bowl, mix Dijon mustard, olive oil, minced garlic, chopped rosemary and thyme, salt, and pepper. Rub this mixture thoroughly over the beef.

Prepare Vegetables

Peel and cut the carrots, parsnips, potatoes, and red onion into large chunks. Spread the vegetables in a large roasting pan, drizzle with a little olive oil, season with salt and pepper.

Roasting

Place the seasoned beef on top of the vegetables in the roasting pan. Pour the beef broth into the bottom of the pan. Roast at 200°C (400°F) for 20 minutes, then reduce the temperature to 160°C (325°F) and continue roasting for another 90-120 minutes, or until it reaches your desired internal temperature (e.g., 57-60°C / 135-140°F for medium-rare).
