In a pan, render some chicken fat (if available, otherwise use oil) and sauté the remaining ginger and garlic until fragrant. Add the washed jasmine rice and toast for 2-3 minutes. Pour in the reserved chicken poaching liquid (about 2.5-3 cups), season with salt and pepper, and cook the rice until tender and all liquid is absorbed, about 15-20 minutes.

Prepare the sauces: for the chili sauce, mix chopped chilies with a little chicken broth and sugar. For the ginger-garlic sauce, grate the remaining ginger and garlic, mix with a little sesame oil and chicken broth. Serve dark soy sauce as is.
