ingredients
Steps
Prepare and Poach Chicken
Thoroughly clean the chicken, rub with salt inside and out. In a large pot, bring water to a boil with half of the ginger, 3 cloves of smashed garlic, and 2 whole spring onions. Add the chicken and simmer on low heat for 40-50 minutes until fully cooked. Remove the chicken and immediately plunge it into an ice bath for 10 minutes, then drain and brush with sesame oil. Reserve the poaching liquid.
Cook the Rice
In a pan, render some chicken fat (if available, otherwise use oil) and sauté the remaining ginger and garlic until fragrant. Add the washed jasmine rice and toast for 2-3 minutes. Pour in the reserved chicken poaching liquid (about 2.5-3 cups), season with salt and pepper, and cook the rice until tender and all liquid is absorbed, about 15-20 minutes.
Sauces and Serving
Prepare the sauces: for the chili sauce, mix chopped chilies with a little chicken broth and sugar. For the ginger-garlic sauce, grate the remaining ginger and garlic, mix with a little sesame oil and chicken broth. Serve dark soy sauce as is. Carve the chicken into pieces, serve with the fragrant rice, cucumber slices, and the dipping sauces. Drizzle with a little chicken broth before serving.
Extra Tips
► Don't discard the chicken poaching liquid; it's essential for the fragrant rice and a delicious soup.
► For perfectly tender chicken, an ice bath is crucial to stop the cooking process and make the skin crispier.
► Make an extra batch of sauce, because it's so delicious everyone will want more!
