2.5 cm Galangal, thinly sliced
5 leaves Kaffir lime leaves, torn
2 pieces Thai bird's eye chilies, sliced (to taste)
3 tbsp Fish sauce
3 tbsp Fresh lime juice
1 tbsp Tom Yum paste (optional, for extra flavor)
150 g Cherry tomatoes, halved
0.3 cup Fresh cilantro, chopped (for garnish)

Prepare Aromatic Base

In a medium pot, bring the broth to a boil. Add the bruised lemongrass, thinly sliced galangal, torn kaffir lime leaves, and sliced chilies. Simmer over medium heat for 5-7 minutes to allow the flavors to infuse.

Add the sliced mushrooms and halved cherry tomatoes to the soup. Cook for another 3 minutes, then add the peeled shrimp. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook them, as they can become rubbery!
