Prepare Chicken

Thoroughly wash the chicken wings, then pat them dry with paper towels. Season with salt and pepper to taste. In a large bowl, mix cornstarch and all-purpose flour, then toss the chicken wings in the mixture until fully coated.

First Fry

Heat a generous amount of vegetable oil in a deep pan or wok to 160°C (325°F). Fry the chicken wings in batches for 6-8 minutes until cooked through and lightly golden. Remove them from the oil and drain on paper towels.

Make the Sauce

While the chicken is frying, prepare the sauce. In a small saucepan, combine gochujang, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and brown sugar. Bring to a boil over medium heat, then reduce heat and simmer for 3-5 minutes until thickened and sticky.

Increase the oil temperature to 180°C (350°F). Fry the chicken wings again, in batches, for 2-3 minutes until beautifully golden brown and extra crispy. Remove them and immediately toss them in the warm sauce until fully coated. Garnish with toasted sesame seeds and chopped green onions before serving.

Thoroughly pat dry the chicken wings with paper towels before frying for extra crispiness.
