Cut the chicken breast into small cubes, about 1-1.5 cm (0.4-0.6 inches), or mince it. In a large bowl, combine the diced/minced chicken with the grated cheddar cheese, garlic powder, ground paprika, salt, and pepper. Mix thoroughly until you get a homogeneous mixture.
Breading
Prepare three deep plates: put flour in the first, beaten eggs in the second, and panko breadcrumbs in the third. Form walnut-sized balls or smaller, flatter bites from the chicken mixture. First, roll them in flour, then in egg, and finally in panko breadcrumbs, ensuring they are evenly coated.
Frying
Heat a generous amount of vegetable oil in a deep pan or pot over medium-high heat, to about 170-180°C (340-350°F). Carefully place the breaded bites into the hot oil, only as many as fit comfortably, and fry until golden brown and crispy, about 2-3 minutes per side. Remove them to a paper towel-lined plate to drain excess oil. Serve immediately, while hot.

► For even crispier bites, use panko breadcrumbs; they provide a much better texture than regular breadcrumbs.
► If you prefer not to deep-fry, bake the bites in an air fryer at 190°C (375°F) for 12-15 minutes, or in an oven at 200°C (400°F) for 20-25 minutes, flipping halfway.
