Thoroughly wash the pork belly. In a large pot, place the pork belly, whole onion, garlic, ginger, green onions, doenjang, instant coffee (if using), black peppercorns, and bay leaves. Pour enough water to cover the meat, then add the soju or rice wine.

Boil the Pork

Bring the water to a boil over high heat, then reduce the heat to medium and simmer the pork belly, covered, for 90-120 minutes, or until it is very tender. The meat is done when it can be easily pierced with a fork. Check the water level occasionally during cooking and add hot water if necessary.

Once the pork is cooked, remove it from the pot and let it rest on a cutting board for 5-10 minutes. Then, slice it into approximately 0.5 cm (0.2 inch) thick pieces.
