Prepare Strawberries

Wash and hull the strawberries. Slice about 100g of strawberries thinly for layering. Puree the remaining 300g of strawberries with an immersion blender or fork, then mix with 25g of sugar, lemon juice, and water. This will be the soaking liquid for the ladyfingers.

Mascarpone Cream

In a heatproof bowl, whisk the egg yolks with the remaining 50g of sugar. Place the bowl over a saucepan of simmering water (bain-marie), ensuring the bottom of the bowl does not touch the water. Cook, stirring constantly, for about 5-7 minutes until the mixture thickens and turns pale yellow. Remove from heat and let it cool. Once cooled, fold in the mascarpone cheese and vanilla extract until smooth and creamy.

Layer and Chill

Dip each ladyfinger quickly into the strawberry liquid (do not over-soak), then place 2-3 pieces at the bottom of each glass. Spoon a layer of mascarpone cream over them, then add some slices of fresh strawberries. Repeat the layering: ladyfingers, cream, strawberries, until the glasses are full. Finish with a layer of cream and fresh strawberries on top. Refrigerate the glasses for at least 2-4 hours to allow the flavors to meld and the dessert to set. Garnish with fresh mint leaves before serving.
