Preparation
Dice the chicken breast into 2-3 cm pieces, then season with salt, pepper, and paprika. Peel and finely chop the onion and garlic. Wash, core, and dice the bell pepper.
Sear Chicken
Heat the olive oil in a large skillet or pot over medium heat. Add the diced chicken breast and sear until golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Sauté Vegetables & Rice
In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the garlic and bell pepper, and cook for another 2-3 minutes. Then, add the rice and stir-fry for 1-2 minutes until the grains become translucent.
Cook & Simmer
Pour in the chicken broth, stir in the reserved chicken, frozen peas, and drained corn. Bring to a boil, then reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and all the liquid has been absorbed. Stir gently occasionally.
Rest & Serve
Remove the skillet from the heat and let it rest, covered, for 5 minutes. Then, fluff the rice with a fork and serve immediately. Garnish with fresh parsley for extra flavor.
