Preheat your oven to 175°C (350°F). Grease and flour a 23x13 cm (9x5 inch) loaf pan, or line it with parchment paper.

Mash Bananas

In a large bowl, mash the very ripe bananas with a fork until they are mostly smooth, but a few small lumps are fine.

Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and optional ground cinnamon. Set aside.

Wet Ingredients

Add the granulated sugar, lightly beaten egg, melted butter, and vanilla extract to the mashed bananas. Mix well to combine.

Combine & Bake

Gradually add the dry ingredients to the wet mixture, mixing only until just combined. Do not overmix! If using, fold in the chopped walnuts or chocolate chips now. Pour the batter into the prepared loaf pan and bake at 175°C (350°F) for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

The riper the bananas, the sweeter and more flavorful your bread will be, don't be afraid of black-skinned bananas!

Do not overmix the batter; mix only until just combined to keep it soft and moist.

If the top browns too quickly, loosely cover it with aluminum foil during the last 15-20 minutes of baking.
