250 g Fresh Spinach
150 g Cream Cheese
2 cloves Garlic, minced
40 g Grated Parmesan Cheese

Prepare Spinach

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the fresh spinach and cook until wilted (about 3-5 minutes). Remove from heat, squeeze out any excess water, then roughly chop.

Make the Filling

In a bowl, combine the cream cheese, chopped spinach, grated Parmesan cheese, oregano (if using), salt, and pepper to taste. Mix well until creamy and thoroughly combined.

Assemble the Rolls

Lay out the drained roasted red pepper strips on a cutting board. Place about a tablespoon of the spinach filling onto each pepper strip, then carefully roll them up. Repeat with all pepper strips.

Preheat your oven to 180°C (350°F). Arrange the rolls on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until the cheese is melted and the rolls are heated through. Serve warm or cold, as an appetizer or a side dish.

Extra Tips

If using fresh peppers, roast them at 200°C (400°F) for about 20-25 minutes until soft and slightly charred, then peel them.
