Preheat your oven to 180°C (160°C for fan-assisted ovens). Peel the potatoes and cut them into approximately 0.5 cm thick slices. Par-boil them in salted water for 5-7 minutes until partially tender. Drain and set aside. Separate the broccoli into florets and steam or boil them in lightly salted water for 3-4 minutes until bright green and slightly crisp. Drain and set aside.

In a frying pan, heat 2 tablespoons of olive oil. Sauté the finely chopped onion over medium heat for about 5 minutes until translucent. Add the crushed garlic and cook for another minute. Spread half of the potato slices evenly over the bottom of a medium-sized (approx. 20x30 cm) ovenproof dish. Layer half of the broccoli florets on top, followed by half of the sautéed onion mixture. Drizzle with half of the sour cream sauce and sprinkle with one-third of the shredded cheese. Repeat the layering with the remaining potatoes, broccoli, onion, and sauce. Finally, sprinkle the remaining shredded cheese over the top. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the cheese is bubbly.

Remove from the oven and let it rest for 5-10 minutes before slicing and serving. Garnish with fresh parsley for an even more appetizing look.
