Prepare Spinach
Wash the spinach thoroughly, then blanch it in hot, salted water for 1-2 minutes until wilted. Drain it, squeeze out as much water as possible, then chop it finely.
Malfatti Dough
In a large bowl, combine the chopped spinach with ricotta, grated Parmesan, egg, nutmeg, salt, and pepper. Gradually add the flour until you get a workable but still soft dough. With floured hands, shape it into oval dumplings about 2-3 cm in size.
Tomato Concassé
Score the tomatoes with a cross, then blanch them in hot water for 30 seconds. Cool them in cold water, peel, deseed, and dice finely. Heat olive oil in a pan, sauté the minced garlic for 1 minute, then add the diced tomatoes. Cook over medium heat for 5-7 minutes until slightly thickened.
