220 g Cooked chicken breast, shredded
220 g Shredded cheddar and/or Monterey Jack cheese
0.5 medium Red onion, finely diced
0.5 medium Bell pepper (any color), finely diced
15 ml Olive oil
5 g Chili powder
2.5 g Ground cumin
1 g Salt to taste
1 g Black pepper to taste

Prepare the Filling

In a skillet over medium heat, warm 1 tablespoon of olive oil. Add the finely diced red onion and bell pepper, and sauté for 5-7 minutes until softened. Stir in the chili powder, ground cumin, salt, and pepper, and cook for another 1 minute until fragrant. Remove from heat and mix in the shredded chicken breast.

Assemble the Quesadilla

In a clean skillet over medium heat, warm one tortilla. Sprinkle a layer of shredded cheese over one half of the tortilla, then spoon half of the chicken and vegetable filling onto it. Cover with another layer of cheese. Fold the other half of the tortilla over to create a half-moon shape.

Cook and Serve

Cook the quesadilla for 3-4 minutes on each side, until golden brown and the cheese is melted and bubbly. Repeat the process with the remaining tortillas. Remove from the pan, cut into wedges, and serve immediately. Enjoy your meal!
