Slice the pork belly into thin strips. Cut the kimchi into bite-sized pieces if necessary. Dice the tofu, chop the onion, mince the garlic, and slice the green onions. Prepare the gochugaru, gochujang, and soy sauce.
Sauté and Season
In a medium pot or Korean earthenware pot (ttukbaegi) over medium heat, sauté the pork belly in sesame oil until lightly browned, about 3-5 minutes. Add the chopped onion and minced garlic, and cook for another 2-3 minutes until fragrant. Then, add the kimchi, gochugaru, gochujang, and soy sauce. Mix well and sauté for 5-7 minutes until the kimchi softens and the flavors meld.
Simmer the Stew
Pour in the water or broth. Bring to a boil, then reduce the heat to medium and simmer, covered, for 15-20 minutes to allow the flavors to deepen. Taste and season with salt and pepper if needed.
Finish and Serve
Add the diced tofu and enoki mushrooms (if using), and cook for another 5 minutes until the tofu is heated through and the mushrooms are tender. Garnish with fresh green onions and serve immediately, hot, with rice.
