1 tsp dried oregano
2 tbsp olive oil
0.5 tsp salt
0.3 tsp freshly ground black pepper
100 g shredded cheddar cheese (for serving)
100 g sour cream (for serving)
10 g fresh cilantro (for serving)

Preparation

Chop the red onion, garlic, and red bell pepper. Drain and rinse the kidney beans.

Brown the Meat

Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and brown it for about 8-10 minutes, breaking it apart as it cooks. Drain any excess fat.

Sauté Vegetables

Add the chopped onion to the pot and sauté until translucent, about 5 minutes. Then add the garlic and bell pepper, cooking for another 3-4 minutes until slightly softened and fragrant.
