Couscous and Vegetables
Bring the vegetable broth to a boil, then pour it over the couscous in a heatproof bowl. Cover and let it stand for 5-7 minutes until all the liquid is absorbed. Fluff with a fork. Meanwhile, deseed the pomegranate, dice the cucumber and cherry tomatoes, thinly slice the red onion, and chop the fresh mint and parsley.
Grill Halloumi
Slice the halloumi cheese into approximately 1 cm thick pieces. Heat a little olive oil in a frying pan over medium heat. Fry the halloumi slices until golden brown on both sides, about 2-3 minutes per side. Remove from the pan and set aside.
Assemble the Salad
In a large bowl, combine the couscous with the diced cucumber, cherry tomatoes, red onion, pomegranate seeds, mint, and parsley. Add the grated lemon zest and freshly squeezed juice, along with the olive oil and optional ground cumin. Season with salt and pepper to taste, then mix thoroughly.
