Preheat your oven to 175°C (350°F). Line an approximately 20x20 cm (8x8 inch) baking pan with parchment paper, leaving an overhang on the sides to easily lift out the brownies later.

In a medium heatproof bowl, melt the unsalted butter and two-thirds of the white chocolate (about 200g) over a double boiler or in the microwave on low power, stirring frequently. Once smooth and glossy, remove from heat and let cool slightly.

Combine Ingredients

In a large bowl, whisk together the granulated sugar, eggs, and vanilla extract with a hand whisk until light and frothy. Pour in the melted butter and chocolate mixture and mix thoroughly. In a separate bowl, combine the all-purpose flour and salt, then gradually add to the wet ingredients, mixing only until just combined. Do not overmix!

Fold in the remaining white chocolate chunks (about 100g) into the batter. Pour the mixture into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until the edges are set but the center is still slightly wobbly. A toothpick inserted should not come out completely clean, but rather with moist crumbs.

Remove from the oven and let cool completely in the pan before using the parchment paper to lift it out and cut into squares. Serve at room temperature, or slightly warmed with a scoop of vanilla ice cream.
