Cut the fish fillets into 3-4 cm pieces, season with salt and pepper, then drizzle with half of the lime juice. Set aside. Slice the onion, tomatoes, and bell peppers thinly, and mince the garlic.

In a large, heavy-bottomed pot or clay pot (if available), spread 1 tbsp of dendê oil. Layer with some of the onion, tomatoes, and bell peppers. Place half of the fish pieces on top, then repeat with another layer of vegetables. Add the remaining fish, then cover with the rest of the vegetables and minced garlic.

Pour in the coconut milk and the remaining 2 tbsp of dendê oil. Cover the pot and cook over medium heat for 20-25 minutes, or until the fish is cooked through and the vegetables are tender. Avoid stirring too much to keep the fish pieces intact.
