Prepare Strawberries
Wash and hull the strawberries. Set aside a few nice ones for garnish, then purée the rest with an immersion blender or in a regular blender. Stir in the lemon juice.
Dissolve Gelatin
Soak the gelatin sheets in cold water for 5 minutes, then squeeze out the excess water. In a small saucepan, melt the gelatin over low heat, stirring constantly (do not boil!). If using powdered gelatin, mix it with 2 tbsp cold water, let it bloom for 5 minutes, then heat until dissolved.
Whip Cream
In a cold bowl, whip the cold heavy cream with the powdered sugar and vanilla extract until soft peaks form.
Combine & Chill
Gently fold the strawberry purée into the whipped cream, then carefully add the dissolved gelatin, stirring continuously to ensure it's evenly distributed. Divide the mousse among 4 glasses or bowls and refrigerate for at least 2-3 hours, or until set.
