Wash and hull the strawberries. Set aside a few nice ones for garnish, then purée the rest with an immersion blender or in a regular blender. Stir in the lemon juice.

Soak the gelatin sheets in cold water for 5 minutes, then squeeze out the excess water. In a small saucepan, melt the gelatin over low heat, stirring constantly (do not boil!). If using powdered gelatin, mix it with 2 tbsp cold water, let it bloom for 5 minutes, then heat until dissolved.
