Activate Yeast

In a small bowl, mix the lukewarm water with sugar and crumble in the fresh yeast. Let it sit for 5-10 minutes until the yeast activates and becomes foamy on top.

Knead Dough

Sift the flour into a large bowl, add the salt, then pour in the activated yeast mixture. Knead the dough by hand or with a stand mixer for at least 10-15 minutes until it's smooth, elastic, and slightly sticky. Cover with a clean kitchen towel and let it rise in a warm place for 60-90 minutes, or until it doubles in size.

Shape Lángos

Once the dough has risen, turn it out onto a lightly floured surface and divide it into 4 equal portions. With oiled hands, form them into balls, then flatten them into thin discs about 15-20 cm (6-8 inches) in diameter. The center should be thinner, and the edges slightly thicker.

Fry and Serve

Heat a generous amount of sunflower oil in a deep pan or pot (to about 170-180°C / 340-350°F). Carefully place the lángos into the hot oil and fry both sides until golden brown, about 2-3 minutes per side. Remove them and place on paper towels to drain excess oil. Meanwhile, crush the garlic and mix it with a little water. Brush the fried lángos with the garlic water, then generously spread with sour cream and grated cheese. Serve immediately!

Extra Tips

The dough is perfect when it's slightly sticky but pulls away from the bowl. Don't over-knead, or it will become tough.

Lángos is best served fresh and warm. Experiment with other toppings like sausage or onions!

If you don't have fresh yeast, you can use 7g of dried yeast, which can be mixed directly with the flour.
